Today we are cooking "Doi Begun" (Fried Brinjals or Eggplant in Curd Gravy). It is basically a Bengali cuisine which is quite popular in the Bengali community. It can be served as a Jain recipe as it does not contain onion & garlic.

Today we are cooking "Doi Begun" (Fried Brinjals or Eggplant in Curd Gravy). It is basically a Bengali cuisine which is quite popular in the Bengali community. It can be served as a Jain recipe as it does not contain onion & garlic.
This cuisine is very easy and can be cooked at home very easily and with easily available ingredients.
"The marinate pan fried brinjals (or egg plants) are cooked in curd gravy with very limited spices".
Lets have the recipe as below:-

- Preparation Time: 10 Minutes (Approx.)
- Cooking Time: 20 Minutes (Approx.)
- Vegetarian Recipe
- Jain Recipe (without onion & garlic)
Ingredients:
- Brinjal or Egg Plant: 1/2 Kg or 02 Medium Large Size
- Musturd Oil (for frying & cooking)
- Curd: 200 Gms.
- Turmeric Powder: 05 Table Spoon
- Kashmiri Red Chili Powder: 05 Table Spoon
- Cashew Paste: 01 Table Spoon
- Salt: 02 Table Spoon (or as per taste)
- Sugar: 1/2 Table Spoon
- Asafetida (Heeng): 1/2 Tea Spoon
- Corionder Powder: 01 Table Spoon
- Green Coriander: For decoration
- Cumin Seed: 1/2 Tea Spoon
- Green Chillies: 04 Nos.
- Garam Masala Powder
- Water: As required
Preparation: Take the curd in a bowl. Add turmeric powder, kashmiri red chili power (02 table spoon each) & corionder powder (01 table spoon) in the curd and mix well. Keep this mixture for using further for gravy.
Cut the brinjals or egg plant in round shape (thickness: 03 mm approx.) Wash it properly and take the round pieces in a plate.
Take a bowl, add turmeric powder, kashmiri red chili power, salt (02 table spoon each) and sugar (1/2 teas spoon). Mix all the ingradients usign your hands and make a marination for brinjals.
Sprinkle the marination on round shape brinjals on the both sides and let it rest for 10 minutes. Meanwhile you may prepare the gravy side by side.
Process:
- Heat musturd oil in a pan, add marinated brinjals and shallow fry both sides for 03 minutes each. Repeat the same process for all the brinjals and keep fried brinjals in a plate for further use.
- For Gravy: Heat oil on medium flame and add cumin seed, let it crackle. Add turmeric powder, kashmiri red chili power, salt (02 table spoon each), asafetida (heeng): 1/2 tea spoon. Keep stirring for 30 seconds and then add cashew paste. Mix all the ingradinets prporperly.
- Turn off the heat and add curd mixture prepared earlier. Mix well so that curd is mixed well with the other ingradients. Add water accordigly as per requirement.
- After a minutes, turn on the heat and add salt as per taste and green chillies. Let the gravy boil.
- After boil start, add fried brinjals in the gravy and let it simmer for another 04-05 minutes.
- After 05 minutes, turn off the heat.
- Serve the cuisine is a bowl with garnished wih green corionder leaves.
Our "Doi Begun" is ready to be served. Serve hot with roti & steamed rice.
