Today's recipe is... SINDHI KADHI...
Sindhi Kadhi is one of the main
cuisine of Sindhi Community. This is basically a recipe which can be
served in Lunch as well as in Dinner.
Served with steamed rice, Sindhi
Kadhi can be a option when you want to cook something different with
ingredients which are available in your kitchen. It can be cooked with
most of the vegetables available in kitchen.
The main thing about this recipe is
that, it do not contains Onion and Garlic, which means it can be nice
recipe for one who does not eat onion and garlic, may be called as a
Jain Recipe.
Lets have the recipe as below:-

- Cooking Time: 25 Minutes (Approx.)
- Vegetarian Recipe
Ingredients:
- Gram Flour (Besan): 05 Table Spoon
- Green Chilli: 02 Nos. (can be increased / decreased as per taste)
- Asafetida (Heeng): 1/2 Table Spoon
- Salt: 1-1/2 Table Spoon (can be increased / decreased as per taste)
- Turmeric Powder: 1/2 Table Spoon
- Cumin (Zeera): 1/2 Table Spoon
- Black Mustard Seeds: 1/2 Table Spoon
- Green Curry Leaves: 10 Nos.
- Green Coriander: Few fresh leaves
- Oil: 04 Table Spoon
- Okra (Bhindi): 100 Gms.
- Potatoes: 02 Medium size
- Drum Sticks: 02 Nos.
- Tomatoes: 02 Medium Size
- Ginger: 01 Inch
- Water: 3/4 Litres
Preparation:
- Cut all the vegetables in regular manner (Okra, Drumstick, etc....)
- Dice the potatoes in small cubes
- Finely chop green chillies
- Take out the pulp of tomatoes in a bowl
- Grate ginger and keep aside
- Finely chop few fresh leaves of green coriander
Process:
- Start with putting a pan on medium heat. Add 01 table of oil, let the oil heat and add Okra (Bhindi). Fry the same for 03-04 minutes and keep aside.
- Repeat the same process of all other vegetables available (excluding drumsticks). Keep the vegetables aside which shall be used later on.
- Put the same pan on medium high flame. Add 1/2 table spoon of asafetida (heeng), 1/2 table spoon of cumin (zeera), 1/2 table spoon mustard seed. Let all the ingredients crackle for 15 seconds. Add green chilies, curry leaves and saute for 15 seconds.
- Now, add 05 table spoons of gram flour (besan) and saute contentiously so that lumps are not formed in the gram flour. Saute for around 05 minutes and then start adding little little water in multiple steps. Keep stirring in the pan. After stirring for 08 minutes after adding water, let boil comes to the mixture. Cover the pan for around 02 minutes.
- After boiling has started, add salt, turmeric powder and saute for around 30 second. Then add tomato pulp and grated ginger. Stir and cover the pan for 02-03 minutes.
- Now you can see that the oil has started floating above in the Kadhi. At this time add all the fried vegetables including drumsticks and potatoes.
- After adding the vegetables, mix properly and cover the pan for another final 06 minutes.
- After 06 minutes, add finely chop fresh leaves of green coriander and turn the gas off.
Plate in an bowl and serve hot with steamed rice.
