Hara Bhara Kabab !!

Hello Friends,


Presenting first recipe on this blog is "Hara Bhara Kabab". This can be served as snacks as well as main course (when served with Paratha). It is an easy recipe which can be prepared using common ingredients which are available at home.


Lets have the recipe as below:-
  • For 04 People
  • Preparation Time: 02 Hours (Approx.)
  • Cooking Time: 01 Hours (Approx.)
  • Vegetarian Recipe  

Ingredients:
  1. Spinach (Palak): 250 gms.
  2. Soaked (for 02 hours) Chana Daal: 100 gms.
  3. Ginger Garlic Paste: 01 Table Spoon
  4. Salt: As per taste
  5. Green Chilies: 05 Nos. (can be increased / decreased) as per taste
  6. Whole Spices: 01 Table Spoon (Pepper, Black & Green Cardamon, Cumin, Cloves)
  7. Clarified Butter: 04 Table Spoon
  8. Hung Curd or Grated Cheese (or Paneer): 1/2 Cup
  9. Cashew Nuts: 05-06 Nos.
  10. Crushed Pepper: 1/2 table spoon

Process:  

Start with putting a pan on medium heat. Add 1/4 liter of water and let it boil, after boil add soaked chana daal, ginger garlic paste, green chilies, whole spices and salt (as per taste). Let it boil for 03-04 minutes and turn the gas off. Let the chana daal and other ingredients cool.

Put all the ingredients in a mixture jar, add a table spoon of clarified butter in it and grind to make a silky smooth paste. Add water if needed.

On the other hand, blanch Spinach in boiling water for 05 minutes and make a thick paste. Do not grind for long time.

Now, take a pan on medium high flame pan and add 02 table spoons of clarified butter. Add cumin (1/2 spoon) and then add paste of spinach. Bhunno for 01 minute and add chana daal paste. Bhunno continuously for 05 minutes. After 05 minutes turn off the gas and allow the mixture to cool by putting it in an refrigerator for 15-20 minutes so that the clarified butter makes it tight and bind it properly.

For filling, take hung curd or grated cheese (or paneer) in a bowl. Add crushed pepper, salt, finely chopped cashew and mix it well. Keep the mixture aside.

Take out the mixture from refrigerator and start making kababs (in the shape of tikkis, round and flattened). Fill the filling of hung curd or grated cheese (or paneer) in the middle of the kababs. You may also avoid this step of fillings, if you do not have ingredients. Make all the kababs in the same manner.

Now again, take a pan on medium high flame pan and add 01 table spoons of clarified butter or refined oil (as per your wish). When the pan is hot, put all the kababs on the pan and allow keep the kababs to shallow fry on one side for at least 05 minutes on medium flame. After 05 minutes, turn the Kababs to other side and check if they are crispy from one side. Shallow fry on second side for 05 minutes. Turn the gas off.

Garnish with onion rings and serve with green chutney.
